The MAX31865 is an easy-to-use thermistor to digital output converter optimized for platinum resistance temperature detectors (RTDS).
The external resistor sets the RTD sensitivity, and the high precision Delta-σ ADC converts the ratio of the RTD resistance to the reference resistance into a digital output.
The MAX31865 input has overvoltage protection up to 45V and provides configurable RTD and cable open and short condition detection.
PT100 probe line 0.5M PTFE line on -50~200 accuracy 0.5%.

Edit: I looked again, and it turns out they did include the little surface mount resistor in a packaging strip. Updating to 4 starTLDR: I received the wrong reference resistor . Theboard appears to work and it appears I've gotten what's advertised. It's advertised it comes with a pt100 probe, and that it works with both pt100 and pt1000. The problem starts where the board I received appears to be set up for the pt1000 probe. The reference resistor on my board is 4301 which (according to makerguides.com) is 4300 ohms, and therefore only reads correct on the pt1000 probe. The 4300 (or 430 ohm) resistor will work with the pt100 which came with the board. I'm purchasing a pt1000 and hopefully that'll work. Sucks that I already cut the required traces for 3 wire and will have to fix them for the 2 wire
