GOOD DESIGN
Aesthetics must push into function. Every curve and angle is used to ensure a secure and comfortable hold on the handle. Our knives are exceptionally well balanced and every seam is flush. This means our knives feel great to grip and hold, work well for heavy kitchen use and are easy to keep clean and sanitary. The knife feels like a natural extension, a precise tool that can easily be used for long durations of time while cutting and prepping food.
HEAT TREATMENT
It took 3+ years of research and development to dial in the specific heat treatment process that would ensure our knives are both hard enough to take a sharp 16 degree edge, yet durable enough to keep that sharp edge during heavy kitchen use. Every blade goes through our precise ULTRA6 heat treatment which brings out the best qualities of each steel and gives the knives a Rockwell hardness rating of 58-61 +/-2, allowing the blade to take a remarkably sharp edge.
HANDCRAFTED
At the end of the day a knife needs to perform. All Cangshan knives proudly can do just that. Poorly balanced. If you intent to store on a magnetic strip, forget about it for the blade will not support the weight of the handle.Bottom line, the collection is designed more for those who want to appear rather than those who actually are serious cooks.

Cangshan N1 Series knives are incredibly sharp and cuts through everything like it was butter! They are well balanced and fit fantastic in my hand to make slicing or chopping a breeze. They hold their sharp edge for a long time....and...I love the fact that it's one solid piece without having to worry about a riveted handle breaking off or getting discolored over time. These knives will last me a very long time and it's one of the best purchases I have made ever! I love to cook and the Cangshan N1 Series knives that I have purchased have made that so much easier!

Knives are well balanced and super sharp. Other reviews have mentioned that the top of the tang has a real edge to it and that's true. But I took my steel and did a coupe, of passes to round it off and have a very lovely knife as a result. And for the price you can't beat it. Better balanced and sharper than any of my Henckels
