So I’m running Into a height problem with the 5 mm cob lights. I feel like I need to pick a little off the top of the cob portion so that the clip completely engages and locks down. Otherwise my connection is loose.

These are interesting little connectors. They require very close attention when attaching. If you're just a tiny bit off, they won't work. If you don't get them on correctly, you pretty much have to throw the whole connector away. I tried pulling the clips out and re-using them, but it's nearly impossible.
