An $80 pair of scissors?? Surely you must be mad!I was looking to replace my aged pair of Wusthof scissors, which had been lovingly used for the past ten years, but finally was having a hard time keeping the blades together enough to cut. Looking through the options, there were a lot of scissors available at a lower price point, with fairly decent reviews. However, coming across these Shun shears, the overall consensus seems to point to these as the highest quality. I was certainly not interested in replacing a pair of scissors every few years, so I thought I would jump down the rabbit hole and try these out.Overall, do I think these are worth $80? Absolutely. Should scissors/shears cost that much? Well, that would depend on your personal preferences. For me, it was easy to tell, as soon as I picked them up, that the quality was on a different level. The full length of the metal throughout made the balance much better, without being tip heavy. Some people have been unhappy with the elastomer grips, but in my hands, I was pleased with the texture and grippiness of the material. Opening and closing the scissors was buttery smooth, without being so tight that it felt the blades would be grinding against each other. The best way I can compare this to, is fishing with an ultra-high end fishing reel. There is absolutely no play with the handles, where they would feel loose and not quite apposing each other. It certainly had no problems cutting through anything I threw at it: flower stems, chicken bones, lobster shells. I would often find myself looking around just to see what I could try and cut. It especially was wonderful for cutting open the rigid plastic packages that items are often shipped in, which are oh so prone to slicing open a vein.Overall, the only downside that I could find (other than the upfront cost), was that because of the tight tolerances of the shears, it was difficult to make multiple quick cuts. Cutting down a steak into bite-sized pieces for my kid took longer than usual, but boy did each piece have nice square edges!I would strongly recommend these shears, as I can easily see them lasting for the forseeable future.

These are Fantastic! My dog eats a raw diet and most of that comes from chicken. Now that she is old and missing some essential molars for chewing, I need to cut up her food. I had tried a $15 pair of poultry shears, but they weren't satisfactory. Tired of messing around, I went with what I thought could be the best poultry shears and they seem to have lived up to that expectation. They are much stiffer and heavier than the other pair.They cut MUCH easier and they cut on the first squeeze. Skin, tendons, meat, leg bones, spine, liver, hearts, the plastic wrapping, you name it, doesn't phase these. Not once did I have to force the shears apart because skin or tendon was jammed between the blades with the shears fully closed. These have always cut the first time every time which is such a pleasure.I have average hand strength for a guy and sometimes am not able to cut through the occasional large leg bone. When that happens, I prop the shears on the edge of the sink and press my body weight onto it. This is abuse; I have yet to damage them. The last ones bent easily with just arm strength.These come apart so that they can be fully and completely cleaned. They aren't spring loaded, so getting a full bite isn't as easy as it is with spring loaded scissors, but when they are that wide, they can be harder to squeeze. The gullet isn't as big as the cheap pair I have, which is noticeable. The gullet is still very good, though. Once the bone is in there, it stays. Some gullets on other poultry shears are shallow and bones pop out like a shot.These are amazing. I didn't know shears could perform so well. I use them every day and am so happy not to fight with my shears every single feeding for my dog. I have less arm fatigue and can process the chickens faster.

I have usually purchased less expensive kitchen shears which lasted for a year or two and were mediocre at best but they cut things like lettuce and chicken skin - sometimes but were not good at much else. When I explored the choices at Amazon for kitchen shears I read reviews and came across these and the price nearly floored me. Nearly $80 for scissors? Then I thought about how much I have spent over the years replacing ineffective, poorly made products and decided to give these a try knowing that I could return them without hassle if I wasn't satisfied with them. Well, they cut everything like butter with smooth action, are easy to clean (I never put my shears in the dishwasher and always hand wash them) and having used them for many months, they are showing no sign of wear. This is truly a quality product that will probably last for years.By the way - some of the information posted on Amazon about these shears is incorrect, they do not have "Ebony black Pakka Wood Handles", many of their premium knives do but not these shears.When you think about it, having wooden handles on kitchen shears used to cut poultry and other food items would not be that sanitary.
