Product Description

O'Creme Bread Lame is an Essential Tool for The Professional and Home Bread Bakers

“Lame” is French for “Blade” and pronounced “Lahm”

What is the use of this tool?

This tool cuts/docks/slashes/scores bread, baguettes, and sourdough loaves prior to placing bread in the oven, to help the dough rise and to control its expansion during baking to give it a professional look.

A score on the surface of your pre-baked loaf allows the dough to expand in the oven without tearing the skin or crust and also lets moisture escape; correct scoring lets the baker control where the loaf will open or bloom; that precision of the score will ensure a pleasing appearance of the baked bread and allow seasoned bakers to give the bread their own unique("signature") look

The cut will also achieve the releases of gas trapped inside the dough.

How To Score Your bread?

Score your loaf with this blade after you've finished proofing the dough and are ready to put it in the oven; hold the lame with a firm grip and with a quick motion slice into the loaf.

O'Creme Bread Lame Tool Quality and Design

Stainless steel blade sharpened on both sides of each edge; blade is concave (curved) to cut flaps (also called dough shag, meaning shaggy dough) thinner than possible with a traditional straight razor

Plastic handle offset and wider near the blade for comfortable grip between thumb and forefinger; blade size 7/8 inch x 1-5/8inch; overall length (blade and handle) 5-3/4 inch

This lame fits into chef's shirt pocket and comes with a protective plastic blade cover for safe use and storage.

Not sharp, dulled even to worse. A razor blade attached to bamboo stick works much better, and you can even replace the blade!

I purchased a lam like this for preparing bread for baking and it worked well. My lam skills are still in the making. My new use for my lam is to lightly scrape the enameled burner pans of my gas stovetop. For years, I have tried every cleaner and solvent I could find to remove baked on food from my cooktop. I kept it as clean as I could, but was bothered and embarrassed over the dull layer of hardened food which obscured the shiny black finish it once had. On YouTube, a man showed how to use a straight blade to remove years of baked on material from a different stovetop. The surfaces on his stove were straight. Mine are curved, everywhere! Then it came to me. Use my lam! It has a handle. It curves to the contour and it’s inexpensive. After patiently, lightly scraping, I am happy to say that my twenty year old cooktop looks good as new. The beautiful, black shiny enamel is still there! I bought this one to replace my old lam for scoring bread.

I liked how cheap this thing is, but can't get behind how quickly the blade rusts... It's really only for one-offs... I'd be interested if the razor could stay rust free for 2 weeks, but, I've had 3 of these things now and each one the razor rusts after a couple of days, definitely within a week it is rusted and useless. I went out and bought a double sided lame from King Arthur Flour for like $30... Best Decision Ever.

Only lasts a few uses before it begins to rust even though it was washed and dried and put away immediately on every use. Since you can’t replace the blades it costs more than it is worth.

Rusted after going in the dishwasher one time. It still works fine but I wish it were stainless

I liked the way this razor fits in the hand and is curved. I only wish that it worked well when cutting dough.I have tried several times but the blade is dull and catches the dough every time. And forget about fine line work when scoring and decorating your loaves. Not possible with this device. I ended up resorting to a double sided shaving razor which was finer and sharper and cheaper! This one will end up as a sting cutter and nothing more. In the kitchen drawer it goes!

I looked at a lot of lames for my wife... finally settled on these because at the rate she'll use one, this set of 5 will likely last several years. I like the fact that they're disposable... changing a double-edged razor blade can be tricky. I'm an old ER doc.... the thought of her cutting herself and needing stitches makes me wince. ;-)

Haven't used the item yet but am anxious to try very soon. My knives didn't cut good enough so can't wait to bake!
