This knife makes a great addition to any semi professional or home chefs collection of cutlery. The grip is comfortable and the knife has a good balance. It arrives razor, sharp, and ready to use. It's a good length blade for any kind of cutting that you need to do, not too big to put your fingers at risk, and not so small that can't get the job done. Excellent value.

It seems sometimes it is hard to know what one needs until it happens to show up. This chef's knife was no exception. We do have a full collection of quality kitchen knives from decades ago, but it seems only certain knives get used very often. We do have a single, large chef's knife longer than this new one, but I think the fact that it is so long is part of why it is not used very frequently. I really have to be doing a lot of processing and cooking to get the big knife out, so it sits. This 7 inch chef's knife, on the other hand, is the size I always needed, but never really thought about. I sliced up some home grown tomatoes first with this new knife and it was as if they were not even there. Anything I cut into was so easy I could not get over it. Maybe one thing we need to do is spend some time sharpening all of our knives. But that would not really compensate for having a more useful, shorter, chef's knife. The fact is this is the size that feels the most comfortable in hand, and is better suited to the processsing tasks I need to do. I can tell this is going to be my new favorite knife I look for first before any others.

The first knife I received was bent so I had to replace it. The replacement was fine. I wanted to add a Santoku knife to my set. The price was right. The blade is on the thin side and feels a bit delicate compared to my other chef knives. I don't like that the steel is not through the whole handle so I worry that at some point the handle will break. It is definitely sharp so I will use it. Be careful, I cut myself the first time. It is very sharp.

This decent, smaller chef's knife is suitable for smaller hands. It is only 7" as opposed to the more traditional 8". It is super sharp. I compared it to my regular knife, which I keep razor sharp, and it cut through vegetables similarly. The handle is OK and reasonably comfortable. The packaging is somewhat utilitarian. The balance is a bit off. However, I think most would find this knife to be quite useful. It is made in Japan, which is nice.

Basic chef knife. Cuts well and good for general purpose kitchen chopping. The handle is a bit slippery, I prefer something with a bit more friction. Also, the grade of stainless steel is not mentioned although it is listed as corrosion resistant, the grade of stainless steel would indicate how resistant it is to corrosion. It is very light and thin. So, a nice mid-grade basic knife. I think the price is too high for this knife.

I'm on the fence about this one. The blade is shaving sharp and they purport this knife is made in the famous knife-making area of Tsubame-Sanjo, but this knife has one of the cheapest handles I've encountered. It's injection molded with visible flash and gate vestige and very light weight. It does not feel like it has full tang construction and the knife is very front-heavy. I don't think this is a very high quality knife and can't recommend it at the current price. Even if the steel is high quality (they don't mention what type it is), the overall fit and finish is poor compared to other similarly-priced knives.

Without really trying, I've managed to accumulate about a dozen fine chef knives. All were manufactured in Asia, a few claiming to use Japanese steel. This ENZO knife is the first one originating in Japan. It's extremely sharp. Today, I used it to divide into smaller pieces, a large uncooked rump roast. It was like slicing through butter. I'll probably use one of my larger knives to carve the roast beef when cooked, but this seven-inch knife will see frequent use. The well-written (that's rare) care instructions suggest sharpening once or twice a month. I think you won't be disappointed with this hand-forged Gyuto.

This is a quality product and a great value. It's super sharp, the grip is well designed and it is balanced. If you're slicing or dicing at speed, you don't have to worry about the grip or the balance. Highly competitive with products that sell at 2 + times the price. Beware if you're not used to dealing with professional level items. A mistake with an item this sharp will send you to the ER.
