About 20º off calibration, and way bigger than it looks in the photo. It reacts a bit slower than I like, but it's serviceable. I like that it's NSF-rated, and it's built very well, but this should be calibrated out of the box. I'll have to adjust it myself. I use it solely for deep frying in a dutch oven.

Comark Instrument CD400K Candy/Deep Fry Thermometer has a quick response time and tested to be accurate over a surprisingly wide range of temperatures. This is a fine quality instrument. I use it every day..
